Caregiver Recipes: Creamy Pumpkin Soup

The season of the pumpkin is still going strong, but that does not mean that your caregiver journey needs to be filled solely with pumpkin spice coffee, cakes, and other sugary treats. This rich and satisfying soup is savory and filling, perfect for those cold late fall and early winter nights when you want something that will fill you up, make you cozy, and give you the nutrition that your body needs. You can feel fantastic giving this soup to your aging loved ones because it has tremendous dietary fiber, vitamins, and minerals from the pumpkin and potatoes. This soup freezes beautifully, so do not hesitate to make up a huge batch so you can freeze some for your family to enjoy later in the season.

What You Will Need

  • 2 tablespoons of butter
  • 1 chopped medium onion
  • 2 cups of sliced peeled potatoes
  • 2 cans of chicken broth
  • 1 15 ounce can of solid pack pumpkin
  • 1/2 teaspoon of ground nutmeg
  • 2 to 2 1/2 cups of milk
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1 cup of sour cream
  • 3 cooked bacon strips, crumbled
  • 1 tablespoon of fresh parsley, chopped
  • Large saucepan
  • Blender or food processor

What to Do

  • In the large saucepan, warm the butter
  • Saute the onion until tender, stirring carefully to prevent excessive burning or the onions sticking to the bottom of the pan
  • Add the broth and mix well, using the edge of a heat resistant spoon to scrape up any browned bits from the bottom of the pain
  • Add in the potatoes and pumpkin together
  • Cook on medium until the potatoes are tender, which should be about 15 minutes
  • Remove from the heat
  • Cool completely
  • In the blender or food processor, puree half the mixture until smooth
  • Remove this portion and put aside in a bowl or other container
  • Add the second half of the mixture to the food processor
  • Spoon a small amount of the pureed mixture over the top to make processing the second half easier
  • Puree until the entire mix is smooth
  • Add in the first half of the mixture and combine
  • Return to the pan, still on medium heat
  • Add in the milk and stir to incorporate completely
  • Add the nutmeg, salt, and pepper
  • Heat the mix all the way through, which will take several minutes. Be sure to stir throughout the heating process to make sure that there are no air bubbles or thick areas that may resist heating
  • Combine the sour cream and parsley in a small bowl
  • Spoon the soup into bowls
  • Top each soup bowl with a dollop of sour cream
  • Sprinkle the top of each dollop with a little bit of the crumbled bacon
  • Serve while still warm

Extra tip: You can make this dish vegetarian and still get the same luscious flavor and fantastic nutrition. Simply replace the chicken broth with vegetable broth and eliminate the bacon. Instead, roast pumpkin seeds in a low oven with olive oil and sea salt until lightly browned and crispy. Sprinkle these seeds over the top of the soup before serving for an extra crunch, salty flavor, and a bump of protein.
