Delicious Salmon Loaf
1 – 16 ounce can of salmon, drained and flaked
1 cup fresh bread crumbs
1 cup grated carrots
1 ½ teaspoons prepared yellow mustard
2 eggs, beaten
½ cup scalded milk
2 tablespoons melted butter or olive oil
3 tablespoons lemon juice
1 tablespoon chopped fresh parsley
¾ teaspoon salt
1 pinch ground black pepper
Preheat the oven to 350 degrees F. Grease one 8”x4” glass or metal loaf pan. Using a medium bowl, mix together all the ingredients. Mix by hand until well blended and press into the loaf pan. Bake for 50 minutes in the oven and then cool 5 minutes before serving.
This recipe makes 1 loaf. Good served hot or sliced when cool to make sandwich fillings. Take 1 slice of salmon loaf and put into sandwich along with a slice of onion, tomato and some torn lettuce.
